Pressure Cooker Thai Red Curry Lentil Soup To The Rescue

I think I might start a series called "Instant Pot Diaries" where I can share my experiments and fails and not just the successes because otherwise I think it makes it seem like everything I make works like clockwork the first try. This couldn't be farther from the truth, to be honest. Some things come out perfectly the 1st, 2nd and 3rd times and other things require a bit more tinkering. From now on, when I am offering tips, lessons learned, failures and other times where I fall flat on my face, I will tag it "instant pot diaries" so you can have all of my shame in one convenient place.

Just in time for NYE, I am sharing not only a recipe for a great appetizer with you that will wow your friends and solidify your reputation as an amazing host, but a chance to win $25 worth of A rla Dofino Harvarti , a bamboo cheeseboard and cute, ceramic dry erase cheese markers. I make no secret of my love for frozen puff pastry, especially during the holidays so if you don't have any in your freezer, you need to do something about that STAT.  Come on, quick like a bunny - you still have a couple of days to get ready for New Years. For this particular turnover, I chose to use the creamy harvarti  because this appetizer required maximum melty creaminess and a mild flavour that would complement the savoury filling. It's time for soup again but this mild weather is making it difficult to want to even want soups and stews. It would appear that winter is passing us by this year so even though I feel like should be bbqing and planting herbs in my shorts, it is January and a soup must be made. I did a squash pear soup that nobody liked but me a while back so I thought I would try again with a more savoury version and this time I would add a bit of bacon because bacon makes everything more delicious. I am determined to get The Kid to eat squash soup if it kills me.

Its Friday So It Must Be Soup! Butternut Squash Pear Soup

Last summer I had the most incredible squash pear soup with blue cheese and I have been craving it ever since. I had a squash to do a soup with this week and I was going back and forth between replicating the pear squash soup or doing something spicy with coconut and curry paste and , in the end, I chose to try out a pear soup. I found lots of great looking soups for inspiration and I finally settled on this soup from The Pastry Affair as my base but I switched out the apples and juice for pear, I added some pancetta and thyme and to cut the sweetness, I added just a bit of curry powder. I find curry has this ability to add a new depth of flavour with actually making the food taste like curry and I find I use a pinch of it here and there all the time. On it's own it's quite sweet but once you add the greek yogurt and the blue cheese, the sweetness sits in the background and lets the stinky socks and the sour tang of the yogurt play down.
