Pickled Beet Devilled Eggs

Every easter, my mom made ham, scalloped potatoes, baked beans and because there were five kids and that means there were A LOT of hard boiled easter eggs, she would always make devilled eggs. Her's were not fancy. She would mash the yolks with a fork and mix in Miracle Whip - YES SHE USED MIRACLE WHIP- a bit of sweet pickle relish, salt and pepper and a bit of finely chopped green onion. There was no piping of the filling either. She just heaped the creamy yolk filling into the hollows of the whites and sprinkled a bit of paprika over the top. I love those simple eggs although I don't use Miracle Whip for anything but I also love the look of these pink eggs. The curry gives a nice balance to the slight tang from the brine but you can totally use your own favourite recipe for the creamy yolks. Unlike my mother, I prefer to using a piping bag (or a sandwich bag if you don't have a piping bag handy) so I can achieve maximum pretty. A bit of parsley (or dill or ...

It's a new year and I am starting to book some new, exciting events and classes. First up will be another Drop in Dinner at The Deppaneur here in Toronto on Friday, January 22 starting at 6pm. I will be serving this salad with either a delicious Pork Chili Verde or my vegan Jackfruit Pozole  , some Agua de Jamaica to wash it down and Mexicanish Compost Cookies for dessert. I made the salad that this was inspired by and it was delicious but some things just didn't work for me so I made some changes and tinkered with it and came up with this variation. Don't get me wrong, Rick Bayless's version was delicious but the dressing was thicker than I wanted and I found that the addition of orange juice brightened it up (and I thinned it out a bit too). As one of the ten chefs participating in the Ten for the Next Gen Series at Harbourfront's Hot and Spicy Food Festival   I was tasked with coming up with something that would fit the themes of sustainability and passing traditions on to the next generation. I love the way the crispy black beluga lentils mimic caviar  This is it. This is my final entry for the  Lentil Recipe Revelations Challenge  and I think it's a doozer. I had made some of this beluga lentil za'atar at the beginning of my recipe development phase and although I wasn't sure what I was going to do with it, I knew they would make an appearance. They are perfect when you want to add a bit of crunch to something and the addition of the za'atar turns the lentils into an actual condiment. As a group of bloggers, we are scattered across the country so the reality of throwing a proper baby shower where we all sit in a circle on wooden, folding chairs, drink too much white wine and wrap the expectant mommy up in toilet paper are slim to none but that can't stop us from throwing a virtual shower, can it? Citrusy Fennel Salad And Why Does It Seem Like I Never Cook Anymore?

I honestly feel like all I have done lately is go out to eat. I am either at a media preview for someone's new summer menu or a cocktail party to promote Savour Stratford, which is great so don't get me wrong. I just feel like I haven't cooked anything beyond dippy eggs and toast for weeks. Father's Day was the perfect excuse to grill up a couple of beautiful striploins, bake some potatoes and make a giant salad. Simple, delicious, and most importantly, made by my own hot little hands. I taught my first cooking class at Loblaws a couple of weeks ago and it went very well, I think. Nobody threw things at me or booed and, most importantly, everyone seemed to actually listen to me. I was given a recipe for a seafood chowder with fennel and then I was to supply a second of my own choosing. Since the chowder would use up half a bulb of fennel, it seemed like a good idea to use the other half in a salad and showcase a way to eat it raw. The ladies in the class...

Beet Risotto

Anyone who knows me, knows that I love making risotto and to me, it's something I often resort to when I am out of food, have no ideas and if dinner isn't served within the hour, I am going to have children's services knocking at my door. I know that to some people it is an intimidating, special occasion dish but to me, it's cooking for dummies. At it's most desperate - I mean simple, it's just a cup or so of arborio rice, whatever vegetable I find lying at the bottom of the crisper, scrape the ice off of a handful of frozen shrimp or the last dregs from the bag of peas that I found when I was scrounging around in the freezer for the shrimp, a carton of low sodium chicken broth, a bit of butter and fresh parmesan and dinner is on the table in half an hour. Out of white wine? Use some beer or port or sherry or skip that part altogether.  Sure, you are chained to the stove for 20 minutes of constant stirring but that also means you are forced to drink the wh...

Super Duper Food - Quinoa Salad

Even though his dish didn't win the regional Almost Famous Chef competition last week, it was my favourite. Kellie Callender's Slow Roasted Salmon with Quinoa Salad is totally my jam. Don't get wrong- all of the other dishes were great but this was something I could see myself eating at home all time. Salmon is our "Shack is away working out of town" fish so I skipped that part for now but I didn't let that stop me from trying the salad because, luckily, he doesn't care for salmon but he really likes quinoa.

Buttermillk Beet Slaw

Shack loves coleslaw and I love to make things that he loves a bit healthier. Over the years, I have settled on this basic buttermilk dressing that is based on one I found in Cook's Illustrated,  but I do play with additions to the cabbage. Sometimes I add sliced fennel and some carrot, sometimes I might throw in some radish and use honey dijon or another flavoured mustard. The bottom line is that buttermilk is much healthier than a heavy mayonnaise based dressing and it's tangy and delicious and I do prefer it. Sometimes we like a vinegar based dressing but those are loaded with sugar so they aren't all that good for you either so I don't really make that at home. I do love to add raw, grated beets because after the salad sits for an hour in the fridge you are left with a really pretty, pink hued slaw and the earthy taste of the beet seems to really compliment the tangy buttermilk dressing - so does fennel when I go that route. Summer like weather is here, even it it's not supposed to be this hot yet and that means we have already started to eat like it's July. Last summer, I was knee deep in my no reEATS  challenge so The Kid and I were pulling our hair out, trying to come up with things we felt like eating in the hot weather. Generally speaking, I keep all sorts of dips and salads and condiments in the fridge and then we will grill some fish or sausages or a bit of meat and that will be dinner night after night. Some nights we might have some greek pita, other nights a bit of pasta salad, a little chunk of cheese and olives to round out the platter but we are all pretty happy eating basically the same meal night after night.  You know, I was fine with the no repeating a recipe during the cold winter months, but the summer almost killed me.
