Smokey Spanish Meatloaf

Who doesn't like meatloaf? You know who doesn't like meatloaf (apart from people who don't eat meat of course)? People who haven't eaten a delicious meatloaf, that's who. We eat it prepared in a few different ways to keep it interesting. One of our favourites is Italian Meatloaf  and Italian Meatloaf take 2  , we do a Korean Style Meatloaf  and a cranberry glazed turkey meatloaf that is full of thanksgiving flavours without the hassle of roasting a big turkey. I promised The Kid that I would make it this week. I am always looking for new ways to jazz things up a bit when I came across my smoked paprika. Hmmmm. Not into making a huge turkey dinner this year but still want all the flavours and kind of feel like you had turkey dinner? This blast from the past was posted on my other blog, NoReEats back in 2011  and it's something I make when we are craving turkey dinner at other times of the year. Making a huge turkey for just the three of us is kind of ridiculous even though if we could, we would have a big turkey dinner once a  month all year round. If you think about it, I should have had five more kids just to justify more turkey  but it's too late now. I have to make do with this tasty turkey meatloaf and one, measly kid. I alway freeze some turkey stock after christmas and thanksgiving dinner so I use that to make this but chicken gravy works fine in a pinch. I think you can buy turkey stock from Kitchen Basics if you really want to use turkey broth and don't have any handy.  Just make sure you use all the same herbs and spices that you would use in your stuffin...

K Loaf - Korean Meatloaf with Gochujang Glaze

Oh gochujang, oh gochujang, could I possibly love you any more than I already do? I THINK NOT! I am slowly letting this stuff take over my life and never tire of finding ways to incorporate it into my regular recipes. All I have been able to think about all week is a korean inspired meatloaf but everyday life has conspired to thwart my desires. I even went to the store for meat so I could make it yesterday and they had no pork or beef on sale. I go to the grocery store across from The Kid's school a couple times a week early in the morning to buy meat because they mark tons of stuff down to make way for the day's fresh shipment. It's a small store and it doesn't have tons of room so every morning they mark down a crazy amount of meat - I have been getting a picnic pork roast every week for approx $2.50 but I have to get there nice and early. Italian Meatloaf, Take 2

Getting sick over the entire Christmas holiday is never fun, is it? When you are a food blogger, it's kind of your biggest holiday to showcase all kinds of great foods and fancy pants desserts but nooooooo, not for this kid. We did have a lovely Christmas eve party but I didn't really cook anything. We had mostly charcuterie stuff, cheese and cookies. Oh and waaaaaay too much prosecco but since the prosecco led to the spirited singing of caroles via some youtube karaoke videos, we don't regret the prosecco. Okay, maybe I regretted it a teeny, tiny bit on Christmas morning but not really. We enjoyed lovely turkey dinner with family and they cooked us dinner, so again, nothing to share. Then I woke up on boxing day with the plague and I am just feeling human again today, more than an entire week later. That means that there was no NYE, no New Years Day feast, no parties. Nothing. Italian Meatloaf

My guys love meatloaf and they are really open to all the different kinds of meatloaf I make. We have done a turkey meatloaf that had all the flavours of thanksgiving dinner that was a huge hit. Then there is The Kid's very favourite meatloaf  that has lots of bbq sauce that I change up a little bit every time I make it but as long as there is bbq sauce in there, he is always happy. I make meatloaf with ground chicken, turkey, beef, veal, pork and combinations of all of those meats.  For this particular dinner, I had the idea to make an italian meatloaf covered in pancetta and stuffed with provolone and went to the grocery store for my beef/pork/veal only to find they were out of ground pork. I was going to buy pork chops and grind it up myself when I spied the italian sausage and thought "why not?"
