One of the perks of this gig is that I often get the opportunity to try out all kind of products and  I make it a point to only accept things I already like or am already interested in trying. When I was asked to do something with some  Tre Stelle cheese  I wasn't about to turn that down, especially with a brand like Tre Stelle, that is a Canadian staple and a product line I already use all the time. Their extra smooth ricotta is almost always in my fridge. I guess I could just eat some and tell you what I think about it but that's not really how I roll, is it? Spaghetti with Bacon, Panko and Arugula for Throwback Thursday

It's throw back thursday and so I am sharing this recipe that I made back in March of 2011 for NoReEats and decided to make again tonight. I have made a few changes since I started making this dish in an effort to lighten it up without sacrificing any flavour because if that can't happen, I will always go with the original, full fatty creamy dish but, in this case, I am happy to report that it's every bit as delicious as the original version that sported a full cup of 35% cream. It's bad enough that we are putting bread crumbs on our pasta - we might as well just throw in a bowl of rice and some mashed potatoes, really. Think of it as an ode to carbs and just don't eat it every day. In the end, this pasta is everything I think pasta should be: quick, easy, flavourful and filling. We love edamame. If you have ever eaten sushi, you have probably had steamed, salted edamame in the pod and might not even know what edamame is apart from the fact that it is a tasty snack. Let me give you quick answer: it is the preparation of immature soybean in the pod and it's packed with protein, fibre, folates, vitamin K and more. In North America, we just call the actual soybean edamame, regardless of how it's prepared or whether it's in the shelled or removed. One of my favourite, quick lunch bag items, we go through this stuff like an ape goes through bananas. I honestly feel like all I have done lately is go out to eat. I am either at a media preview for someone's new summer menu or a cocktail party to promote Savour Stratford, which is great so don't get me wrong. I just feel like I haven't cooked anything beyond dippy eggs and toast for weeks. Father's Day was the perfect excuse to grill up a couple of beautiful striploins, bake some potatoes and make a giant salad. Simple, delicious, and most importantly, made by my own hot little hands. I taught my first cooking class at Loblaws a couple of weeks ago and it went very well, I think. Nobody threw things at me or booed and, most importantly, everyone seemed to actually listen to me. I was given a recipe for a seafood chowder with fennel and then I was to supply a second of my own choosing. Shrimp and Arugula Risotto

I am kind of in super mom mode right now after a week of big wins in the dinner department so I decided to cap my week off with something that was sure to make me look like a total superstar. This kid would be happy if I made him a risotto of dog poop and toe nail clippings so I have to be honest about that right upfront. That said, this risotto is waaaay better than rice with dog poop. There was a big container of baby arugula in the fridge and I was going to buy scallops when I realized that we haven't used shrimp in anything for ages so shrimp, arugula risotto was born. Summer like weather is here, even it it's not supposed to be this hot yet and that means we have already started to eat like it's July. Last summer, I was knee deep in my no reEATS  challenge so The Kid and I were pulling our hair out, trying to come up with things we felt like eating in the hot weather. Generally speaking, I keep all sorts of dips and salads and condiments in the fridge and then we will grill some fish or sausages or a bit of meat and that will be dinner night after night. Some nights we might have some greek pita, other nights a bit of pasta salad, a little chunk of cheese and olives to round out the platter but we are all pretty happy eating basically the same meal night after night.  You know, I was fine with the no repeating a recipe during the cold winter months, but the summer almost killed me. I Love Mother's Tea Because That Means I Get To Eat Tea Sandwiches

Do you think that Oprah loves these tiny, crustless tea sandwiches too or do you think she likes her tea sandwiches battered and fried? Now that I think about it, a chicken fried tea sandwich might be a pretty fabulous thing, no? Anyway, I spent hours looking at tea party treats for our school's annual Mother's Tea and just couldn't decide on what sandwich to make. I LOVE a good egg salad but I was pretty sure that someone else made some because someone always makes egg salad. I wanted to keep things pretty mild, nothing too crazy so I finally settled on these Oprah sammys and then, because it didn't feel like enough, I made some cheese straws too. My southern friends make me feel like I have not lived until I have eaten some tangy, mildly spicy cheese straws and wouldn't dream of hosting a tea party without them so I didn't want to feel like a shoddy hostess (even though I wasn't actually the hostess anyway).
