Feed Your Freezer With A Big Batch of Meatballs

More Meatballs! My last recipe was for these crazy delicious Korean Meatballs and this time, I am showing you how to whip up a big batch of tender meatballs that you can bake off and then freeze because, I know you don't want to hear it, but SUMMER IS ALMOST OVER. Time to stock the freezer for September when life goes back to the daily grind and nobody has time to come home from work or school and make these puppies. So, the difference here is that I use a combo of ground beef, ground pork and Italian sausage and that give me a really tender, moist meatball that has enough fat content that it doesn't get all tough when you reheat the frozen balls of deliciousness down the road. I make this giant batch and throw some of them in a nice, light tomato sauce to eat that day and freeze the rest. Sous Vide Pork Souvlaki

I love the idea of pork souvlaki. I love the flavours, I love the charcoal flavour that the grill imparts and I love any meat that gets dipped in lots of tzatziki. What I don't love is dry, leathery meat and, unfortunately, that is almost always the case when people try to cook small chunks of lean meat over the grill. That's where sous vide comes in. I just made my regular marinade and instead of cutting the pork into bite sized pieces, I cut my pork tenderloins into 1" slices and then after 24 hours of soaking in the fridge, I sous vide them before cutting some of the disks into chunks and skewering them (I left half of them as is and grilled the medallions, which worked even better) right before we threw them on the grill for a quick char. The Kid's sweet 16 is upon us and we always kick off the birthday week with a family BBQ. We are going out for fancy pants Japanese on the actual day so i had thought a Greek mezes style meal would be nice and was planning to do my usual pork and chicken souvlaki but using the sous vide this time. The more I thought about it, the idea of doing two kinds of souvlaki felt kind of boring. I really wanted to sous vide the pork for souvlaki to see if it would solve the dilemma of dry pork, one of my pork souvlaki pet peeves (which it did, recipe coming soon), so that left the chicken. What could I do with chicken that would be easy to feed a crowd, that could be made ahead and just heated up before dinner? As I stared at my tray of boneless, skinless chicken thighs, visions of meatballs began to dance in my head. Chili with Chorizo

Winter is just around the corner and I find myself craving stuff like chili, stew and soup. Went I came to the blog looking for my chili, I was surprised to find that I didn't have a straight up recipe for my regular chili. I found a great recipe for  Red Chili Pork and Beans , Lentil Chili , and a Chili Chicken Soup  but no simple, meaty chili. I was sure that I had posted it at some point and after a search, I found it on No reEats, the blog that documented my year of never repeating a recipe. To be honest, that year was such a blur of stress and mental anguish, that I think I have blocked most of the meals from my memory in order to protect my fragile psyche.  I made a batch of this stuff over the weekend and realized that I had to share it with you guys because it's too good to keep to myself. Beef Mushroom Burrito Means Back to School is Around the Corner

As part of my continuing experimentation with this whole  blend and extend  thing, I have discovered another recipe that is improved by the addition of mushrooms. The mushrooms release liquid that keeps the filling from drying out and it really does make your meat go a lot farther.  I managed to make 7 burritos using only 300 grams of beef and because this filling doesn't have to hold it's shape like a meatball, I think that you could even up the mushroom to beef ratio in this recipe without any trouble. I am going to try it half and half next and will report my findings. If anyone tries it first, please let me know how it went in the comments.
