Shepherd’s Patty Pie - Comfort Food The Whole Family Can Love

Image
It’s winter, it’s dreary and it’s cold and we all want some comfort food, right? My problem is that my idea of comfort food and my guy's idea of comfort food are not the same thing. This week he asked for Shepherd’s Pie. I have made turkey shepherd’s pie that tastes like Thanksgiving dinner that I liked but other than that, it’s really not my favourite dish. He doesn’t like lamb so that’s out and I just find the basic ground beef filling to be boring. Don't send me hate mail because I think Shepherd's Pie is boring, okay? I want to make something that will make everyone happy so I had to put my thinking cap on. my controversial beef patty pops Why not make a filling that I really like and top it with some mashed something or other and just call it a day? What I really wanted was something that was a bit spicy, like a Jamaican beef patty and I thought sweet potato would give a nice balance to the heat from the scotch bonnets. Patty filling is the right consist...

Spicy Gazpacho with Jerk Pickled Shrimp Will Become Your Favourite Summer Dish

Image
So, it's the end of June and it's finally getting really hot and that means I don't want to eat hot food anymore. I start craving ceviche, salads and watermelon by the kilo and something I always think I want to make, but never do, is gazpacho. I really like all kinds of gazpacho so look for some other versions throughout the summer.  This particular dish was inspired by my June SupperClub menu which is mostly Middle Eastern but with a touch of Jamaican flavours, thanks to my Jerk Lamb Kofta . I always start my menu with one dish and then base the rest of menu around that so this time, I wanted something as first course that would be refreshing and light and lean a little towards Jamaica. Both the soup and the pickled jerk shrimp are great on their own (a bowl of shrimp with some bread to sop up the pickling liquid is a great meal in it's own right) but I find that something magical happens when you put the two together. Spicy Gazpacho with Jerk Pickled Shri...

Jerk Lamb Kofta #GrillWithGrace

Image
In my continuing efforts to attain world peace through food, today we are going to look at the similarities between Middle Eastern food and Jamaican food. I was asked to come up with a BBQ recipe using a Grace's Jerk Product as part of their #GrillWithGrace campaign and since you will always find Grace's Jerk Seasoning as well as the marinade in my fridge, I didn't hesitate to accept the gig. I have never really perfected my own jerk, to date, and so I use Grace's all the time. Shack is really picky about jerk and he doesn't like it too allspicey and he doesn't like too hot and since he loves the flavour of Grace's Mild Jerk Seasoning and Marinade, that is what we go with. We always have to keep the picky toddler happy. The traditional way to use this stuff is to rub the seasoning paste all over your chicken or pork and let it sit in the fridge overnight and then cook it, preferably over a grill and it's delicious as is, straight...

Jamaican Patty Pops

Image
About once a year I toy with the idea of making homemade Jamaican beef patties after having one too many stale, microwaved corner store patties. I get all fired up, spend hours reading recipes but then I start thinking about having to find beef rennet for the dough and all of that work and muse to myself "since I have to get on the subway anyway to go find this beef rennet, why not just drop by Bathurst station and buy myself a delectable beef patty and skip all that work?" and that is usually what I do. One bite of that hot, juicy meat pie and all thoughts of beef rennet fly away. Have you ever had the patties at the Bathurst Subway Station??? Honestly. So, there is a bit of a contest going on over at the Food Bloggers of Canada  and I am not one to resist a contest. Mushrooms Canada and Ontario Beef have teamed up to promote their new concept, Blend and Extend. The idea is that you replace some of the ground beef with finely chopped mushrooms in your favourite reci...

Jerk Chicken Take 1

So, Shack and I have been living a little too large since spring. He has taken a ton of time off work to hang out with us and so there have been lots of lunches out and late night pizzas,  too many pub nights and lots of afternoon movies with huge buttered popcorns. Now, he has to go back to work and I have to make sure that I can still fit into actual pants by TIFF in September so we have spent the last 10 days going clean - no pasta, no pizza, no rice, no bread, no wings and poutine, no wine or beer. Somehow, we have managed to have lots of fun together and nobody is dying of malnutrition. HE, of course, has already dropped at least 12 lbs and looks much slimmer. I, on the other hand, have not lost one ounce although my mother in law told me that I look MUCH less bloated. Thanks for that.
