Pasta With Raw Tomato Sauce and Bocconcini

One of my absolute favourite ways to eat really ripe tomatoes is in a raw sauce with pasta. I spent some time in Milan and this was the first meal that my friend, who had been living there for almost a year by that time, made for me the day of my arrival. He mixed up a bowl of diced tomatoes with lots of good olive oil, salt, fresh basil and some onion and let it sit out on the counter all day. When it was time to eat, he cooked up some pasta, ripped up some fresh mozzarella and threw the drained, hot pasta into the bowl of juicy tomatoes, covered that with the cheese and tossed it for a couple of minutes. The hot pasta warms up the room temperature tomatoes a bit and causes the fresh cheese to start to soften and just start to melt. I was invited to the Foodies Forever Blogger Launch put on by Cutco  Cutlery this week and I dragged Shack out with me to act as my photographer, which he does for me on occasion. He happens to be a very good photographer and he also acts as my body guard, chauffeur and male escort. If I ask him to, he also cuts my meat. He is an awfully good guy to have around. The event was held at the Liason College Campus in downtown Toronto. Little did I know that the lovely ladies of Cutco planned on dragging all of us into the kitchen (it is a cooking school) to get our hands dirty. Okay, we got our hands dirty AFTER we washed them thoroughly, of course, and then we washed them again because they did get dirty. This is something we eat a lot during the summer months when tomatoes are at their peak. It seems like such a shame to cook them for those few precious weeks that we have local tomatoes that are succulent and perfect. Nothing is better than a perfectly ripe tomato from your own garden, sliced up with nothing but a bit of sea salt and a grind of black pepper. mmmmm These tomatoes that I used for these weren't local but they were really juicy and sweet and delicious and so instead of throwing them into another salad, I made this pasta. The first time I ever had this was on my first day in Milan about a million years ago.
