Instant Pot Butter Chicken Meatballs

Image
I make my  Instant Pot Butter Chicken  fairly often but I don't always plan well enough to marinate the meat overnight and I do believe that an overnight marinade is essential to achieve a rich depth of flavour in the final dish and avoid it tasting like bland chicken plunked into delicious sauce. My theory was that if I added the chicken marinade ingredients INTO the meatballs, it wouldn't have to sit for so long before I can cook the finished dish. We also really, really love meatballs. A quick search for meatballs on The Yum Yum Factor will reveal my obsession with these orbs of tender delight so it stands to reason that I eventually try to meatballify every favourite recipe at some point. I have been mulling a meatball conversion with Butter Chicken for a while but I have been so busy cooking at work, that I have barely cooked more than scrambled eggs in my own kitchen all year but I finally got around to making it this week. don't be alarmed by...

Feed Your Freezer With A Big Batch of Meatballs

Image
More Meatballs! My last recipe was for these crazy delicious Korean Meatballs and this time, I am showing you how to whip up a big batch of tender meatballs that you can bake off and then freeze because, I know you don't want to hear it, but SUMMER IS ALMOST OVER. Time to stock the freezer for September when life goes back to the daily grind and nobody has time to come home from work or school and make these puppies. So, the difference here is that I use a combo of ground beef, ground pork and Italian sausage and that give me a really tender, moist meatball that has enough fat content that it doesn't get all tough when you reheat the frozen balls of deliciousness down the road. I make this giant batch and throw some of them in a nice, light tomato sauce to eat that day and freeze the rest. The best way to freeze them is to lay them out on parchment lined baking sheets that fit in the freezer. Once they are hard, you can pop them off the tray and throw them in a f...

Why Spicy Koreanish Meatballs Should Be One of the Seven Deadly Sins

Image
Oh my, what a spring/summer I have had. For the last year I have been working as a hired gun, cooking for a local caterer, teaching classes as well as hosting pop ups and private dinners around Toronto.  To be honest, I have had a hard time balancing this new schedule so it was not a huge surprise when i fell ill, mid April. What was not expected was spending  6 weeks on my ass with a lung infection followed by a family situation that took me away from home for the last month. At this point, I kind of feel like a brand new, baby blogger, brimming with fun ideas for some new, tasty treats and I have promised myself I will slow down a bit and make time for The Yum Yum Factor as well as washing my hair regularly and eating while sitting down. First up are these Spicy Koreanish Meatballs that I served with this addictive  Kimchi Fried Rice by fellow blogger, Diversivore  . These babies are sooooooooo good. The sugar/chili pepper coating is a spin on my ...

Double Stuffed Mushrooms - Smokey Stuffed Meatballs Baked in A Mushroom Cap

Image
I made some really delicious Manchego Stuffed Meatballs with Romesco recently to serve as tapas style appetizer. In fact, they have been such a huge hit that when I found out that Mushrooms Canada was holding their annual mushroom appetizer contest for the members of the Food Bloggers of Canada, I looked no further, although it required a bit of tweaking. The original recipe called for serving meatballs on a plate, sitting on a thick smear of romesco, the Spanish sauce made from almonds, bread, olive oil and roasted peppers. Don't get me wrong, I love serving them like this but it really only works when we are actually sitting down to dinner as the whole idea is that you spear one with a fork and drag it through the sauce on it's way to your plate. For this contest, I know they are looking for an appetizer that can be eaten out of hand so what could make more sense than using an actual mushroom cap as a little bed for the meatball right? It's not like ...

Cut The Time in Half by Pressure Cooking Your Meatballs in Tomato Sauce

Image
I have been making tons of pasta in my Instant Pot but the final frontier, for me, was to make meatballs with sauce. I will apologize now for the lack of beautiful photos but, sometimes, I am truly just making stuff for our dinner and so there wasn't much time and the next thin I knew the whole batch had been gobbled up. Take the lack of beautifully staged, lit photos as a sign of it's irresistible deliciousness. My recipe for Rigatoni with Meat Sauce  is probably my most popular Instant Pot Recipe so far at home and online. Although I get tons of great feedback on this one from readers,  it's also a recipe that I make, myself, at least once a week for Shack. Because the Instant Pot has made it feasible to make this during the week he tries to trick me into making it more often but nobody needs to eat this kind of rib sticking pasta more than once a week and until he can figure out how to work the pressure cooker properly, he still needs me to make it for...

Mini Kofta with Beets, Hummus and Zhug at The Hot and Spicy Food Festival

Image
As one of the ten chefs participating in the Ten for the Next Gen Series at Harbourfront's Hot and Spicy Food Festival   I was tasked with coming up with something that would fit the themes of sustainability and passing traditions on to the next generation. Since I can't really draw on my own family traditions, unless I wanted to pass along my mom's delicious Sherif's lemon meringue pie and, don't get me wrong, she made a mean Sherif's lemon meringue pie, I was going to think outside the box and come up with something of my very own. photo: Shack Shackleton Some of my Blend and Extend Recipes: Blend and Extend Beef Patty Pops Shroomy Beef Keftedes Spicy Mushrooms with Pork Chicken Mushroom Salsa Verde Besides coming up with recipes for Mushrooms Canada and their Blend and Extend program, I have totally embraced the philosophy in my own kitchen and you will almost never find me using any sort of ground meat without adding in a huge whack of grou...

Sous Vide Pork Souvlaki

Image
I love the idea of pork souvlaki. I love the flavours, I love the charcoal flavour that the grill imparts and I love any meat that gets dipped in lots of tzatziki. What I don't love is dry, leathery meat and, unfortunately, that is almost always the case when people try to cook small chunks of lean meat over the grill. That's where sous vide comes in. I just made my regular marinade and instead of cutting the pork into bite sized pieces, I cut my pork tenderloins into 1" slices and then after 24 hours of soaking in the fridge, I sous vide them before cutting some of the disks into chunks and skewering them (I left half of them as is and grilled the medallions, which worked even better) right before we threw them on the grill for a quick char. I finally have my perfect pork souvlaki - tender, moist (OH MY GOD THAT HORRIBLE WORD AGAIN) and with all the wonderful souvlaki flavours but without the dry, overcooked bits that are almost unavoidable when you grill them fro...

Sous Vide Chicken Souvlaki Meatballs

Image
The Kid's sweet 16 is upon us and we always kick off the birthday week with a family BBQ. We are going out for fancy pants Japanese on the actual day so i had thought a Greek mezes style meal would be nice and was planning to do my usual pork and chicken souvlaki but using the sous vide this time. The more I thought about it, the idea of doing two kinds of souvlaki felt kind of boring. I really wanted to sous vide the pork for souvlaki to see if it would solve the dilemma of dry pork, one of my pork souvlaki pet peeves (which it did, recipe coming soon), so that left the chicken. What could I do with chicken that would be easy to feed a crowd, that could be made ahead and just heated up before dinner? As I stared at my tray of boneless, skinless chicken thighs, visions of meatballs began to dance in my head. What if I threw the thighs into the meat grinder and added all of the flavours that would go into the souvlaki marinade along with some ground mushrooms for good meas...

Spaghetti and Meatballs at Last

Image
If you read this blog, or know us personally, you will know that there are only a handful of ways to eat pasta in this house. Shack, who loves pasta above all other things, really just means spaghetti/rotini with tomato sauce and meatballs OR with meat sauce, which is just really tomato sauce with meatballs smashed up in it. The only two exceptions are, of course, lasagna which is just a shape shifting pan of spaghetti and meat sauce and carbonara but that has lots of bacon in it and, well, BACON. I, on the other hand, love all forms of pasta with all kinds of sauces - olive oil sauces, cream sauces, fettuccine, farfalle, orecchiette - you put a bowl of some sort of carby goodness in front of me and I will be happy but if I say I'm cooking "pasta" for dinner, I mean meatballs/meat sauce/marinara with spaghetti or rotini, maybe penne if he is feeling adventurous. For that reason, I  was absolutely certain that I must have written down my recipe for plain old spaghett...

Sous Vide Miso Pork Meatballs

Image
This is my first attempt at using one of my own recipes for the sous vide cooker and I am kind of going rogue with the technique which is probably why it was a mix of mainly success with some bumps in the road. I have been wanting to make another asian flavoured meatball like my Vietnamese meatballs but with a nod to Japan for a long time now. We LOVE our little Vietnamese meatballs made with chicken or pork but it's really easy to bake them just a smidge too long and dry them out. Now, with sous vide, they never overcook so, like the sausages, all they require is a little kiss with a hot pan afterwards to brown them up.

Think Out Of The Box With These Ten SuperBowl Sunday Snacks

Image
Okay, I will be straight with you. I don't give a rat's ass about football and I have no interest in eating three quarters of the traditional SuperBowl food that I see all all over the internet and on television. If you want to eat 30 layer bean dip and giant casseroles of melted Velveeta you probably won't want to hear my ideas about what I think makes a great game day spread and I am okay with that. I won't take it personally when you tell me I am nuts to recommend middle eastern inspired crashed potatoes instead of nachos covered in queso if you promise to not take it personally when I refuse to taste your delicious dip made with a package of dried onion soup, uncooked ramen noodles and nutella mixed and sour cream. Deal? So, just because I don't care about football doesn't mean I don't care about a good party with great food, drinks and friends and with that in mind, I always accept an invitation to watch the game and, more importantly, eat w...
