Instant Pot Korean Beef Dips BECAUSE WE CAN

Image
It's the holiday season and I have decided to take off the last couple of weeks leading up to Christmas so that I can get back in my own kitchen and just cook for my family after a busy year of cooking for other people. My family, understandably, is thrilled. The cobbler's family has no shoes syndrome is real. One of the first things I tried last week was the Instant Pot Beef Dip from  Amy and Jacky at pressure cook recipes  . Their methods are so well tested and always work like a charm, and this one was fabulous, as expected. Looking for something with a bit more kick, I used their recipe as a jumping off point to make this Korean Beef Dip. I often make really sloppy, delicious grilled cheese sandwiches out of my Korean Meatloaf and immediately thought that I would LOVE to make a Korean Beef Dip - all the same flavours in the meatloaf grilled cheese with with a spicy jus to dip the sandwich in? YES PLEASE This sandwich is perfect - sharp cheddar and kimchi/gochuja...

Korean Pulled Pork Sandwiches = Love

Image
I made these  Bibimbap Sopes  a couple of weeks ago and it opened up a whole new world of pulled pork for me. Out of that single batch of pork we ate tacos, sopes and sandwiches. I ate the last dregs of it over some rice for lunch and the only reason I haven't made it again already is because Shack has been working on a frozen lake far too north for me to even acknowledge his exact location. We weren't expecting him until the weekend at the earliest but he called to say he was on his way home AND it just happened to be Valentine's day so guess what I made? He had spent ten days eating wings, poutine, wings, fries and more wings at one of the two or three truckstops that were available to them so, to be honest, I could have just made him a  sandwich with nice italian cold cuts on really nice bread and he would have been thrilled. I could have done that but everyone knows that the way to a man's heart is through his pork gland. As much as we all loved it the...

Apple Pulled Pork

Who doesn't love pulled pork? Crazy people, that's who. Making pulled pork in the crockpot is such a no brainer, easy meal that requires almost no time, skill or finesse that I wonder why we don't eat it every single day to be honest. I have still never found THE ultimate pulled pork recipe so I am always tinkering and trying new sauces, new rubs and one day I will find that pulled pork love of my life and I will shout from the rooftops. The best thing about pulled pork is that there is almost no such thing as bad pulled pork. Even if you just throw a pork butt in the slow cooker with nothing but some salt, pepper and a slurp of chicken stock or soda pop or apple juice and then toss it with a good bottled sauce afterwards, it's going to be good enough that your family will still think you are a rock star.

I Love Mother's Tea Because That Means I Get To Eat Tea Sandwiches

Image
Do you think that Oprah loves these tiny, crustless tea sandwiches too or do you think she likes her tea sandwiches battered and fried? Now that I think about it, a chicken fried tea sandwich might be a pretty fabulous thing, no? Anyway, I spent hours looking at tea party treats for our school's annual Mother's Tea and just couldn't decide on what sandwich to make. I LOVE a good egg salad but I was pretty sure that someone else made some because someone always makes egg salad. I wanted to keep things pretty mild, nothing too crazy so I finally settled on these Oprah sammys and then, because it didn't feel like enough, I made some cheese straws too. My southern friends make me feel like I have not lived until I have eaten some tangy, mildly spicy cheese straws and wouldn't dream of hosting a tea party without them so I didn't want to feel like a shoddy hostess (even though I wasn't actually the hostess anyway). I used the recipe from smitten kitchen bec...
