Holy crap, I have been so busy cooking for other people that I have not even had time to cook at home, apart from a grilled cheese here and there. I have a few down days before plunging back into the fire next week so, in an effort to practice what I preach, it's time to get into my own kitchen. I have some interesting recipes that are not quite ready for prime time that will be coming soon, but, in the meantime,  I am still going through some of my favourite crock pot recipes and adapting them to the Instant Pot  since it is supposedly almost mid November and should be feeling like winter by now. I know that most of you think of ribs as a summer BBQ dish but for me, it's always been more of a winter thing so  I have started eyeballing the pork ribs at the butcher. I used to either do them slow and low for hours and hours, wrapped in foil in a low oven or all day in the crockpot for days when I am going to be out too long for that. Pressure Cooker Lahmajoun Beef Stew

First of all, I want to make it clear that this is NOT a magic, super fast pressure cooker stew recipe but it is still easier and quicker than doing it on the stove and the flavour is more intense so the extra steps are worth it. One the issues faced with making beef or pork stews in my Instant Pot is the disparity in cooking time for the meat vs the vegetables. I find that most stews leave me with vegetables that are about to disintegrate by the time the meat is cooked to perfection. To avoid this, many recipes will tell you to keep the vegetables almost whole to avoid this but I also don't want a bowl of stew with giant chunks of carrot and potato either.  When it doubt, I turn to Serious Eats to see how they deal with the dilemma. I like to call it WWKD (what would Kenji do?) One of the most surprising things I have discovered since getting an Instant Pot is how well it does pasta. Okay my people, the Instant Pot adventure continues. If you love to cook but live under a rock, the Instant Pot is a 7 in 1 electric pressure cooker that also serves as a slow cooker, rice cooker, steamer, yogurt maker and more and it is taking the world by storm by the look of it. I was given one to try out and review and I love it so much that I just bought a second one (it came last night!) and I am going to start teaching pressure cooking classes in Toronto with them. Okay, I don't do New Year resolutions, for the most part but I am kind of making one anyway. Due to high level adulting that my life has required over the last 6 months, I have not been cooking enough. It's gotten to the point where our waitress worries about us if we haven't been to the pub in a couple of nights and that is just kind of sad, seeing that cooking is kind of what I am supposed to do over here. Enter my Instant Pot. Because of this stupid, crazy amazing thing I no longer really have an excuse to skip cooking dinner. I can throw together a delicious, nutritious stew like this in almost no time. Honestly, from the first chop of an onion to slopping it into a bowl and slamming it down on the table, this dish takes under 45 minutes. This is my favourite type of recipe because it's more of a template than a recipe.The possibilities are endless and the flavour combinations are only limited by what you happen to have in your kitchen at the moment. Minty Portuguese Style Octopus Salad

When we were in Portugal, we ate some version of octopus salad everywhere we went. Some had tomato and onion, some were just bowls of chopped octopus, doused with copious amounts of olive oil, vinegar and herbs and others were brightened with lots of cilantro and lemon juice. I don't think I could even pick a favourite if I tried, but, if you put a gun to my head, I might say that it was the octopus salad we ate at Ponto Finale (check that meal out here  ). When I don't have the time or inclination to cook and prepare my own octopus, I buy a few chunks of cooked octopus in olive oil from my favourite little Italian grocery store and use that. This is a typical dinner for The Kid and I when we are on our own - just add some crusty bread and a green salad (and a frosty glass of rose for me) and you have got yourself the perfect summer meal and you never had to turn on a stove or do anything more strenuous than chop a tomato. Lighten Up That Shepherd's Pie

This recipe is an oldie but a goodie and what with the weather holding fast at -30000556C for the last week or so, a young girl's thoughts turn to comfort foods. It's been all stews, soups and things that bubble up in the oven around here. This shepherds pie is a lightened up version of the classic, subbing chicken in for the ground meat, it leaves out the cream in favour of a mixture of stock and evaporated milk and you replace 1/3 of the potato /sweet potato with cauliflower for the topping. If you really want to lighten things up , you can replace as much as half of the potato with cauliflower if you like but it won't be quite as creamy. As always, feel free to change up your veg - if you don't like zucchini, replace it with something you do like - you know the drill by now. Spaghetti with Bacon, Panko and Arugula for Throwback Thursday

It's throw back thursday and so I am sharing this recipe that I made back in March of 2011 for NoReEats and decided to make again tonight. I have made a few changes since I started making this dish in an effort to lighten it up without sacrificing any flavour because if that can't happen, I will always go with the original, full fatty creamy dish but, in this case, I am happy to report that it's every bit as delicious as the original version that sported a full cup of 35% cream. It's bad enough that we are putting bread crumbs on our pasta - we might as well just throw in a bowl of rice and some mashed potatoes, really. Think of it as an ode to carbs and just don't eat it every day. In the end, this pasta is everything I think pasta should be: quick, easy, flavourful and filling.
