How to Make a Frittata Full of Fennel and Zucchini The Yum Way

Image
I love a good frittata but, for some reason, I never make them. There are only so many meals in a day and when you cook for a living, you are always making something new and that can mean that tried and true old favourites are forgotten until you are forced to make one and then you remember how much you miss them.

Easy Chicken and Beluga Lentils in the Pressure Cooker

Okay, I don't do New Year resolutions, for the most part but I am kind of making one anyway. Due to high level adulting that my life has required over the last 6 months, I have not been cooking enough. It's gotten to the point where our waitress worries about us if we haven't been to the pub in a couple of nights and that is just kind of sad, seeing that cooking is kind of what I am supposed to do over here. Enter my Instant Pot. Because of this stupid, crazy amazing thing I no longer really have an excuse to skip cooking dinner. I can throw together a delicious, nutritious stew like this in almost no time. Honestly, from the first chop of an onion to slopping it into a bowl and slamming it down on the table, this dish takes under 45 minutes. This is my favourite type of recipe because it's more of a template than a recipe. The possibilities are endless and the flavour combinations are only limited by what you happen to have in your kitchen at the moment. Beets, Roasted Fennel with Pepita Crema

Image
It's a new year and I am starting to book some new, exciting events and classes. First up will be another Drop in Dinner at The Deppaneur here in Toronto on Friday, January 22 starting at 6pm. I will be serving this salad with either a delicious Pork Chili Verde or my vegan Jackfruit Pozole  , some Agua de Jamaica to wash it down and Mexicanish Compost Cookies for dessert. I made the salad that this was inspired by and it was delicious but some things just didn't work for me so I made some changes and tinkered with it and came up with this variation. Don't get me wrong, Rick Bayless's version was delicious but the dressing was thicker than I wanted and I found that the addition of orange juice brightened it up (and I thinned it out a bit too). So, you can make this yourself OR you can come to the Deppaneur, say hi and let me make it for you.  Beets, Roasted Fennel and Oranges with Pepita Crema adapted from Rick Bayless Ingredien...

Citrusy Fennel Salad And Why Does It Seem Like I Never Cook Anymore?

Image
I honestly feel like all I have done lately is go out to eat. I am either at a media preview for someone's new summer menu or a cocktail party to promote Savour Stratford, which is great so don't get me wrong. I just feel like I haven't cooked anything beyond dippy eggs and toast for weeks. Father's Day was the perfect excuse to grill up a couple of beautiful striploins, bake some potatoes and make a giant salad. Simple, delicious, and most importantly, made by my own hot little hands. I taught my first cooking class at Loblaws a couple of weeks ago and it went very well, I think. Nobody threw things at me or booed and, most importantly, everyone seemed to actually listen to me. I was given a recipe for a seafood chowder with fennel and then I was to supply a second of my own choosing. Since the chowder would use up half a bulb of fennel, it seemed like a good idea to use the other half in a salad and showcase a way to eat it raw. The ladies in the class...

Pasta with Clams and Roasted Fennel

Image
Who doesn't love pasta with nice, little clams? Crazy people, that's who. Although I love a straight up vongole with nothing but olive oil, garlic, chili flakes, wine and clams, sometimes I want to kick things up a bit. I was craving a good pasta with clams but I was also craving roasted fennel- what to do? When I thought about it,  it made sense to just throw some fennel in there. Once I got used to the idea of adding fennel, it made it feel less taboo to add some diced tomato as well. At this rate, I will be adding meatballs and smoked trout the next time. Pasta with clams and roasted fennel serves 4 1 head fennel, quartered olive oil kosher salt 400g dried spaghetti 1/4 cup olive oil 1 bls butter 4 cloves garlic, thinly sliced pinch chili flakes salt and pepper 1kg or 2 lbs of small clams 1/4 cup white wine 1 small tomato, diced handful fresh italian parsley, chopped roasted fennel, sliced fennel fronds, chopped to roast the fennel ahead of...

Its Friday So It Must Be Soup! Creamy Tomato Fennel Soup

Image
I had big plans to make a pozole this week but life and work got in the way and there was not going to be time to make anything that labour intensive. With pozole put on the back burner, I found that I couldn't stop thinking about the cream of tomato soup with grilled cheese croutons that Dianne made last week for no reEats. Unfortuntately, she wasn't happy with the recipe she used so I knew I would make up my own but I still love the idea of a creamy tomato soup with those grilled cheese croutons. I also wanted to try out my evaporated milk in place of creme again in a soup so I could keep the creamy texture without adding tons of unwanted fat. I have to tell you, I have not been disappointed with the evaporated milk yet and I have tried it in soups and sauces for months now. It lightens the soup up so that I can indulge more freely in the grilled cheese croutons. Dianne is right about those things - they are truly the star of the show! I used a sharp cheddar with flax...
